To make the keto rhubarb coffee cake you will need the following ingredients:

General Ingredients (Rhubarb)

  • 4.9oz (140g) diced rhubarb
  • 1.75oz (50g) Granulated Sweetener (you can use Erythritol)

For The Cake

  • 4 large Eggs
  • 2.1oz (60g) Cream Cheese
  • 4oz (115g) Butter – melt it, and then let it cool and soldify.
  • 2.1 fl oz (65ml) Almond Milk
  • 7oz (200g) Almond Flour
  • 3.5oz (100g) Granulated Sweetener (Monk Fruit or Erythritol)
  • 1oz (30g) coconut flour
  • 1 1/2 tablespoon Pure Vanilla Extract
  • 2 1/4 teaspoon Baking Powder

For The Streusel

  • 1.75oz (50g) Almond Flour
  • 2 1/2 tablespoon Butter (melted)
  • 1 1/4 tablespoon Coconut Flour
  • 1 teaspoon Cinnamon Powder
  • 1 1/2 tablespoon Granulated Sweetener (Monk Fruit or Erythritol)

🥮 Making Keto Rhubarb Coffee Cake

Step 1

Preheat the oven to 350F (175C).

Then, start chipping the rhubarb into 4 to 5 cm long pieces. Mix them with the sweetener and let them sit for 30 minutes.

Step 2

Line an 8-inch round springform pan with parchment paper. Grease the sides of the pan with butter or cooking spray.

Then, break the eggs into a bowl and use an electric mixer to beat them.

Once they are fluffy and increase in volume, stop mixing. It should take around 2 minutes.

Step 3

Add the sweetener, melted and solidified butter, almond milk, cream cheese, and vanilla extract, to the mixture and beat for another minute.

Step 4

Take another bowl and mix the coconut flour, almond flour, and baking powder. Add this to the wet ingredients and blend until the batter is smooth.

Step 5

To make the streusel, mix the streusel ingredients in a small bowl.

Step 6

Pour the cake batter into the springform pan. Place the rhubarb pieces in a single layer on top of the batter. And to finish it off, add the streusel mix on top.

Step 7

Bake in the oven for about an hour. An old trick I like to use is the toothpick test. I just stick a toothpick in the center of the cake, and if it comes out clean, the cake is ready.

If the cake starts burning on top, and you still have some baking to do, just cover the cake loosely with some aluminum foil. This should do the trick.

Let the keto rhubarb coffee cake cool for an hour, release it from the form- slice, and serve!
