👨‍🍳 How To Make

Follow this easy recipe:

Step 1

We will first make the dressing – it’s really easy. Simply add all the dressing ingredients to a medium bowl and mix until well combined.

Step 2

Place a skillet (I used an 11″ one) over medium heat. Add the butter and melt it. Then, add the caraway seeds. Toast them for 20-30 seconds.

Step 3

Toss in the cabbage, and coat it with the melted butter. Sauté for 4-5 minutes.

Step 4

Then, add in the sauerkraut and combine. Spread everything evenly and reduce the heat to medium-low.

Step 5

Top it with the chopped corned beef and add the dressing on top. Place slices of Swiss cheese and cover the skillet for 5-7 minutes to allow the cheese to melt.

Step 6

Serve and enjoy this amazing casserole! I recommend transferring it onto a plate.

💡Tips

1. Drain The Sauerkraut

One of the most important steps in this recipe is making sure your sauerkraut is well drained.

Place it in a fine mesh strainer and press it down with the back of a spoon to remove as much liquid as possible.

If you skip this step, your casserole could end up watery, which will affect both the texture and the way the cheese melts.

After draining, you can even pat it with paper towels to remove any extra moisture.

2. The Cabbage

When preparing the cabbage, shred it finely – about the thickness of a quarter. If the pieces are too large, they won’t cook evenly and might stay too crunchy.

3. Let It Rest

Once your casserole comes out of the oven, don’t serve it immediately. Let it rest for at least 10-15 minutes before cutting into it.

This resting time allows the cheese to set slightly and helps all the flavors come together. It also makes it much easier to serve neat portions. If you cut into it too soon, the filling will be too loose and might spread all over the plate.

FAQ

1. How long does it stay good in the fridge?

The casserole will stay fresh in the refrigerator for 4-5 days when stored in an airtight container.

The flavor actually gets better after a day or two as the ingredients have time to meld together. When reheating, cover with foil to prevent the top from drying out, and heat until just warm.

2. Can I skip the caraway seeds?

While caraway seeds give that classic Reuben flavor, you can skip them if you don’t like them or can’t find them.

The casserole will still taste good, just slightly different from a traditional Reuben.
