1.76oz (50g) Blanched Almond Flour

3.5oz (100g) Shredded Coconut 

6oz (170g) Mascarpone

3.5oz (100g) Erythritol

1 teaspoon Vanilla Extract 

1/2 teaspoon Coconut Extract 

15g Almonds

🌟 How To Make keto Raffaello Balls

Step 1

Take a bowl and combine the almond flour with the shredded coconut (use about 75-80% of the total amount for this step)  and sweetener.

Then, add the cheese (mascarpone ), vanilla extract, and coconut extract. Mix well.

Step 2

Form 11 balls with your hands. Add an almond into the center of each ball.

Step 3

Coat the balls in the shredded coconut that was left. Enjoy these amazing keto raffaello balls! Yummy!

Can You Use Cream Cheese Instead?

Cream cheese will work, but the results won’t be the same. I tried different types of cheese, and my conclusion is that mascarpone is the best option.

It’s smooth and creamy, and it gives the dish an authentic taste. Make sure to buy high-quality, full-fat mascarpone cheese. The light versions won’t work as well.

Can You Freeze The Keto Raffaello Balls?

I tried freezing these, but it didn’t work out well. The cheese changes texture, and the balls become mushy and watery.

This recipe is very (and I mean – very!) easy. Why not make a new fresh batch when you need some rather than freezing it.

You can make a large batch and keep it in the refrigerator for a couple of days. These are so tasty- they won’t last long!

Are These Really Keto Friendly?

These keto raffaello balls are made from keto friendly, low carb ingredients. So, eating these balls once a week should not cause any problems.

The reason I don’t recommend eating them daily is they do a sweetener. Once in a while won’t hurt, but eating something with sweetener in it every day isn’t the best idea.

Keto is all about moderation and having treats like this in moderation is perfectly fine.
