You will need these ingredients to make the keto cheesecake mug:
5 oz (140g) Cream Cheese
1 Large Egg
2 tablespoons Powdered Sweetener
2/3 teaspoon Vanilla Extract
1/2 teaspoon Lemon Juice
1 teaspoon Lemon Zest
You will also need: two 6 ounce ramekins
🌟 How To Make keto Cheesecake In A Mug
Here is how you can easily make the keto cheesecake mug cake in the microwave:
Mix the ingredients in a bowl using a fork. Whisk it well until there are no lumps.
Grease with ramekins with melted butter.
Divide the batter evenly between the ramekins. Microwave each ramekin, one at a time, for 1 minute (high setting).
It’s easy to check if the keto mug cheesecake is ready- the top should be glossy, and the center slightly jiggly.
Let it cool for at least 1 hour. Decorate with berries on top. Enjoy!
The Cheesecake Crust
The keto mug cheesecake version I shared with you is crustless. I think it’s light and excellent. But, if you want to add a crust – it’s possible.
Stir 5 tablespoons almond flour, 1 teaspoon of sweetener and 1 teaspoon of melted butter. Divide and press into the ramekins.
Then, add the cheesecake mixture on top and microwave as the recipe indicates.
The version with the crust contains 4g of net carbs per portion- almost twice as much.
How Many Carbs?
A portion of this keto cheesecake mug cake contains about 2.5g of net carbs. So, it’s keto-friendly and you can enjoy it without feeling guilty.
But, remember that the keto diet is all about eating real food- meat. Desserts and cakes are a treat, not a daily staple.
So, while this mug cake is keto-friendly, don’t go overboard and eat a pound of it daily.
Keto Chocolate Cheesecake In A Mug
You can make this keto mug cheesecake with “chocolate” as well.
Simply add 1 tablespoon of cocoa powder and 1 tablespoon of sugar-free chocolate chips to the cheesecake mixture.
This chocolate mug keto cheesecake tastes excellent.
Tips And Ideas
Add Banana Extract
If you want to make this keto microwave mug cheesecake even more delicious, add a few drops of banana extract to the batter.
The banana flavor will complement the sweetness of the cheesecake and make it even more irresistible.
