To make these low carb mini donuts you will need the following ingredients:

For The Donuts

  • 1/4 cup Erythritol
  • 2 cups Almond Flour
  • 2 teaspoons Active Dried Yeast
  • 4 tablespoons Coconut Flour
  • 4 tablespoons Psyllium Husk (whole)
  • 1/4 teaspoon Salt
  • 1 1/2 tablespoon Coconut Oil (heated/melted)
  • 2 teaspoons Baking Powder
  • 1 1/4 teaspoon Vanilla Extract
  • 3/4 teaspoon Apple Cider Vinegar
  • 1 cup Water

For The Coating (optional)

  • 1/2 cup Erythritol
  • 1 1/4 teaspoon Cinnamon

🍩 Making Mini Keto Donuts

This keto mini donuts recipe is very simple. Just follow these easy steps:

Step 1

Add the water and dried yeast to a bowl, and mix together well. Set aside for now.

Then, take another bowl, and whisk the coconut flour, almond flour, psyllium husk, erythritol, baking powder, and salt.

Step 2

Create a small indentation in the center of your dry ingredients. Pour in the coconut oil, vanilla, and apple cider vinegar.

Then, pour the water you mixed with the yeast. Use a spatula to mix all the ingredients together until the batter is moist.

Step 3

Start kneading the ball for a few minutes, and form a ball. Cover it with plastic wrap. Set it aside for about 35 minutes.

Step 4

And now we will prepare the cinnamon coating. Stir the cinnamon and erythritol together in a bowl, and set it aside for now.

Step 5

Wet your hands, and divide the dough ball into 12-14 portions. Roll each one into a ball.

Step 6

Prepare parchment paper, and place the balls on top. Press each ball to flatten and shape it into a circle. Form a hole in the center.

Brush each one with melted coconut oil.

Air Fryer Version

Preheat your air fryer to 400F(200C). Fry for about 10 minutes or until they become a bit crispy and golden. Add the cinnamon coating on top once they cool.

Oven Version

You can also bake these mini keto donuts in the oven. Preheat your oven to 400F(200C) and line a baking sheet with parchment paper.

Place the donuts on the baking sheet and bake for 10-15 minutes, until golden brown. Add the cinnamon coating on top once they cool.
