To make the keto mexican cauliflower rice you will need these ingredients:

  • 3oz (85g) Butter
  • 1/4 cup Tomato Puree
  • 2 cups Cauliflower Rice
  • 1 teaspoon Garlic Powder
  • 3 1/2 teaspoons Onion Flakes
  • 3/4 teaspoon Black Pepper
  • 2 teaspoons finely-chopped Cilantro
  • 1/2 teaspoon Salt

🍛 Making Mexican Style Cauliflower Rice 

This low carb mexican rice recipe is very simple. Just follow the instructions below and make the perfect mexican keto rice!

Step 1

Heat a frying pan or skillet over medium heat. Add butter, onion flakes, and garlic powder. Saute for 2-3 minutes.

Then, add the cauliflower rice, salt, and pepper. Saute for 2-3 minutes.

Step 2

Pour the tomato puree and mix well. Cook for another 5 minutes.

Step 3

Remove the pan from the heat. Add the chopped cilantro and mix. Let it cool for 15 minutes, and then serve.

Freezing

I don’t recommend freezing this mexican fried cauliflower rice, because its texture becomes mushy when frozen and thawed.

Since it’s so easy to make, I would just make a fresh batch when you’re ready to eat it.
