It’s so easy to make this low carb lemon mug cake! Just follow these steps:
Add all the keto lemon mug cake ingredients, except the lemon zest, into a microwave-safe mug. Mix and whisk until the batter is smooth.
Stir in the lemon zest. Sprinkle some of it on the top of the keto lemon mug cake as well.

In order to absorb all the lemon juice, we are using coconut flour in this low carb lemon mug cake recipe.
But, if you use too much of it- it can make the cake way too dry. So, follow the recipe and only use 1/4 teaspoon of coconut flour!
Try Adding Other Fruit Extracts
To make this gluten free lemon mug cake we are adding a bit of vanilla. But, you can also add other fruit extracts to your liking.
Of course not all of them are going to blend well with lemon, so you need to be careful in your choice.
But, some good options are orange, grapefruit, raspberry, and strawberry.
Add Cream Cheese On Top
