👨‍🍳 Keto Gelato Ingredients

To make this keto friendly gelato, you will need:

  • 2 cups Cashew Milk (no sugar added)
  • 5 pastuerized Egg Yolks
  • 3/4 cup Powdered Erythritol Sweetener
  • 1 cup Heavy Whipping Cream
  • 2 teaspoons Vanilla Extract

🍨 Making Low Carb Gelato

Follow these steps to make the perfect keto gelato ice cream:

Step 1

Combine the cashew milk and heavy whipping cream in a saucepan, and heat it over medium heat.

Once the mixture starts steaming- remove it from the heat. It’s important to not boil it.

Step 2

Use a stand mixer to beat the erythritol and egg yolks together. A hand mixer should work as well.

Step 3

Combine the cashew milk and heavy whipping cream mixture, with the vanilla extract and egg yolk mixture. Keep mixing until well
blended.

Step 4

Transfer the whole mixture to the saucepan again. Heat over medium-low heat for 12-13 minutes.

Keep mixing the whole time. It’s important to watch the mixture closely – it should not reach boiling.

Then, remove from the heat. Place in the refrigerator for at least 10 hours.

Step 5

Strain the mixture using a strainer, and then place it in the ice cream maker machine.

Turn on the ice cream machine and select the standart program.

Once it’s done- your keto gelato is ready! Enjoy.
