I came across a low carb funfetti cake recipe a while back, and decided to make it for my son’s birthday.

It turned out great, and he loved it! I’ve since made a few changes, and wanted to share my version with you.

To make the funfetti keto cake you will need:

For The Cake

1/2 Cup Coconut Flour

1 teaspoon Baking Powder

2 tablespoon Collagen Peptides

1 Large Egg 

1/2 Cup Granulated Swerve Sweetener

1/2 Cup Butter

1 oz (30g) Cream Cheese

1/4 teaspoon Salt

1 teaspoon Cake Batter Extract ( or vanilla extract)

1/3 Cup Low Carb Sprinkles, plus more for decorating

For The Cake Frosting

1/2 Cup Butter

1 teaspoon Vanilla

1/2 teaspoon Salt

1 Cup Confectioners Swerve Sweetener

2 tablespoons Heavy Cream

🍰 How To Make Keto Funfetti Cake

This keto funfetti cake recipe is super easy! Just follow these steps:

Making The Cake

Step 1

Start by preheating the oven to 330F (165C). Then, grease an 8 inch square baking pan. Line it with parchment paper.

Take a bowl and combine the coconut flour, collagen peptide, baking powders, and salt.

Step 2

Attach the paddle attachment to the stand mixer.

Add the butter, Swerve, and cream cheese to the mixers bowl and cream together until the mixture is light and fluffy.

Step 3

Add the egg and extract to the mixture, and beat to combine.

Then add the dry ingredients to the butter mixture. Beat until well combined. Fold in the sprinkles (optional).

Step 4

Spread the dough in the pan you prepared. 

Bake for about 20 minutes. Once the center is set and the edges are lightly browned, remove from the oven and let cool.

Making The Frosting

Step 1

Place the butter and sweetener in the mixer bowl, and mix well for a few minutes.

Step 2

Add the extract, heavy cream, and salt. Continue beating until the frosting mixture becomes fluffy.

Step 3

Use a spatula to spread the frosting over the top of the cooled cake. You can slice them into bars- or leave it as is. Enjoy this amazing keto funfetti cake!

  • Add the heavy cream, extract, and salt. Continue beating until the mixture becomes fluffy.
  • Spread the frosting over the top of the cake using a spatula . Slice the cake into bars or leave it as is. Enjoy!
