  • 1/4 cup Erythritol (55g)

It’s very easy to make these tasty sugar free macaroons at home. Follow these steps to make the perfect low sugar coconut macaroons!

Step 1

Start by preheating your oven to 350F (175C). Then, line two cookie sheets with parchment paper. Use coconut oil or cooking spray to lightly oil the paper.

Place the egg whites and sweetener in a mixing bowl, and beat using a hand mixer. The eggs should form stiff peaks.

Step 2

Once the egg whites are firm, fold in the shredded coconut and vanilla extract using a spatula.

Step 3

Scoop the batter using a cookie dough scoop and form balls. If the mixture is not dense enough (this happens sometimes), add more shredded coconut. Make 20-26 keto macaroons.

Step 4

Cook the keto coconut macaroons on the two cookie sheets separately – for 10-11 minutes. Only one cookie sheet at a time should be in the oven.
