  • 2 Eggs (large)
  • 20 drops Vanilla Stevia
  • 1/4 teaspoon Salt
  • pinch Cream of Tartar

For the Frosting

  • 1 oz Cream Cheese (softened)
  • 2 1/2 tablespoons Butter (softened)
  • 1/4 teaspoon Instant Espresso Powder
  • 2 tablespoons Swerve Confectioners (amazon)

Follow this easy recipe:

Step 1

Start by preheating the oven to 300°F and lining a baking pan with parchment paper.

Step 2

Separate the eggs into separate bowls. Add the mascarpone cheese, salt, and stevia to the yolks, blending thoroughly using an electric mixer.

Step 3

Sprinkle the cream of tartar on the egg whites and whip with an electric mixer until very stiff.

Step 4
