Keto Chicken Soup Recipe

There are many different chicken soup recipes online. Probably tens of thousands of them. Most of these recipes are keto friendly, but some are not. Today I will share a great keto chicken soup recipe with you. This is how we prepare this soup in our family – for many years. It’s easy and super tasty. I prepare this soup a couple of times a month. I always use fresh chicken and sometimes use turkey meat instead. I hope you will find this recipe useful.

Chicken Meat

Chicken meat is cheap and easy to prepare – you really need to put some effort in order to ruin it. I don’t recommend eating chicken as your “main meat” in the diet because of Linoleic Acid. Unfortunately, chickens nowadays are fed a very poor diet (grain-based), which affects the composition of their fat tissue (high linoleic acid, low stearic acid). The topic of Linoleic Acid is very complex – but to sum things up, if you want to lose weight, and be healthy – avoid products high in linoleic acid. Beef and lamb have a much better fat composition than chicken. That doesn’t mean you need to avoid chicken meat altogether. Absolutely not. Just don’t eat it on a daily basis.

Ingredients
  • 2 pounds Chicken thighs / drumsticks
  • 2-3 pieces Carrots
  • 1 piece White onion
  • 1 handfull Coriander
  • Salt and black pepper
Instructions
  • Place the meat in a pot, and cover it with water entirely. Let it boil and then cook for 10 minutes.
  • Drain the water, and wash the chicken and the pot. Now cover it with fresh clean water again. Once it starts boiling again, lower the heat and let it cook (never boiling, but close to that point).

So yes – it’s much better to use beef or lamb to make a soup (health-wise), but chicken has its own unique taste and texture – which are perfect for soups. That’s why I still eat chicken soup a few times a month. Absolutely delicious. You can use chicken quarters, chicken drumsticks or chicken wings for this recipe. If you want your soup to be fatter – use chicken wings. Chicken wing soups are delicious!

Chicken meat is also good for people with histamine intolerance. Beef is many times aged, and sold for many weeks after the animal was slaughtered. This increases its histamine content. Chicken, on the other hand, is sold “fresh” – just a few days after the animal was slaughtered. Histamine intolerance can be a very frustrating problem. Its symptoms are diarrhoea, nausea, fatigue, and more. Histamine intolerance can also be caused by a lack of certain vitamins and minerals – like magnesium.

You can also use turkey meat for this keto chicken soup recipe. Turkey meat needs a bit more cooking time – but has a completely different flavor. I like turkey wings and turkey drumsticks very much. The problem with turkey drumsticks is the size. You probably won’t be able to fit it in the pot. So I prefer to just roast them in the oven.
