This is one of the best keto pie recipes that I have tried. I have made it several times and it always turns out great.

👨‍🍳 Keto Cherry Pie Ingredients

For this keto cherry pie recipe you will need these ingredients:

Crust

4 cups Almond Flour

a bit over 1/4 cup Coconut Flour (sifted)

a bit over 1/2 cup Granulated Erythritol / Monk Fruit

2 1/2 teaspoon Xanthan Gum

1 teaspoon Baking Powder

1 teaspoon Salt

2 teaspoon Apple Cider Vinegar

3/4 cup Butter

1 Egg (large)

Homemade Keto Cherry Pie Filling

4 cups pitted cherries

3/4 cup Keto Low Carb powdered Sugar (I’ll explain how to make it)

1 1/4 cups Cranberries

1 1/2 tablespoon Lemon Juice

1/2 teaspoon Xanthan Gum

2 1/2 tablespoon Cornstarch

(Using these ingredients we are going to make the best low carb cherry pie filling!)

Final Finsh

3 tablespoon Butter (melted)

1 large Egg Yolk

🥧 How To Make Low Carb Cherry Pie

Follow these steps to make the perfect keto cherry pie:

Step 1

Add the coconut flour, almond flour, sweetener, baking powder, xanthan gum, and salt to a food processor. Blend until everything is well combined.

Then, add apple cider vinegar and the butter and blend again. Once the mixture is well combined, fold in the egg.

Step 2

Take the dough and form a ball. Divide it into 2 pieces – one a bit bigger than the other.

Flatten them and wrap them in plastic wrap.
Place in the freezer for 25-30 minutes.

Step 3

Remove the larger piece of dough from the freezer and place it on a sheet of parchment paper on a flat surface.

Then, add another sheet of parchment paper on top. Use a rolling pin to roll it out until it’s about 10 or 11 inches in width and length.

Once it’s rolled out, place it back in the freezer for another 30-35 minutes.

Step 4

Preheat your oven to 350F – 175C. Remove the dough we flattened from the freezer, and place it into a 9-inch pie pan. Press it down and make sure the sides are even and nice.

Gently cover the sides of the crust with tin foil. Bake for 18-20 minutes.

Step 5

Now we are going to prepare the keto cherry pie filling. Take a large mixing bowl, and add the filling ingredients. Mix them well.

Step 6

Then, place one sheet of parchment paper on the table. Place the second piece of dough on top.

And again- use another sheet of parchment paper on top, and then roll it out. This time- the desired thickness is half an inch.

Use a sharp knife or a pizza cutter to cut out even strips.

Step 7

And the fun part – place the strips of the dough on top in a lattice shape (or any other shape, really). Brush the top with egg yolk and melted butter.

Step 8

We are almost done! Bake the pie for about 45 minutes. Once the top turns golden- it’s ready.

Remove from the oven. Before serving, you have to let it cool for at least 1 hour.
