Cook and brown the ground beef in a large stock pot. Then, drain all the excess fat and grease.

Add the celery, carrots, onions, and cauliflower and cook for 5-6 minutes. Then, add the cheese and mix until it melts.

To make this keto burger soup, I used cheddar cheese. You could also use other cheeses, such as pepper jack or Swiss.

But, in my opinion- cheddar is the best for flavor and texture in this soup.

For this low carb cheeseburger soup, I used 80/20 ground beef. I think it’s the perfect fat ratio for a soup like this.

If you want to use leaner ground beef, you can, but the soup may be a little less rich and creamy.

Lamb and Pork Ground Beef

I made this low carb cheeseburger soup with ground beef, but you can also use ground lamb or pork.

Each one will give the soup a different flavor, so it’s up to you which one you want to use.

You can also use a mix of all three meats if you want. Just make sure the ground meat is not too fatty (which can happen if you include lamb) because a greasy soup is not very appetizing.
