✨ Recipe Ingredients

  • 1 1/2 cups Almond Flour (blanched) – I recommend this one (Amazon)
  • 1/2 cup Coconut Flour
  • 3/4 cup Butter
  • 2 teaspoons Baking Powder
  • 1 cup Allulose
  • 4 Eggs (large)
  • 1/2 cup Almond Milk
  • 1 serving Keto Vanilla Frosting
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 teaspoon Salt

👨‍🍳 How To Make

Follow this easy recipe:

Step 1

Start by preheating the oven to 350°F and lining two 8-inch pans with parchment paper.

Step 2

In a large mixing bowl, combine the coconut flour, almond flour, salt, and baking powder. Set aside.

Step 3

In a stand mixer (or using a hand mixer and a large bowl), cream the butter and allulose until very fluffy, about 7 minutes.

Step 4

Add the eggs one at a time, beating well after each addition until well combined. Then, add the milk and pure vanilla extract and mix until incorporated.

Step 5

Add the dry ingredients to the wet mixture and beat until the batter is creamy.

Step 6

Divide the batter equally between the prepared pans. Smooth the tops and bake in the preheated oven for 23-25 minutes. To check for doneness, insert a toothpick into the center of each cake; if it comes out clean, they’re ready.

Step 7

Remove the cakes from the oven and let them cool for at least 20 minutes. Once cooled, frost them with keto vanilla frosting. Enjoy!

💡Tips

1. Room Temperature Ingredients

Make sure your butter, eggs, and almond milk are at room temperature before you start. This helps everything mix together smoothly and evenly. Cold ingredients can make your batter lumpy or cause the butter to separate.

Take your ingredients out of the fridge about an hour before you plan to start baking. If you forget, you can speed things up by putting the eggs in warm water for a few minutes and cutting the butter into small cubes.

2. Watch The Baking Time

Look for a golden brown color on top, and the edges starting to pull away from the sides of the pan. The best test is to stick a toothpick or thin knife into the center of the cake.

If it comes out clean or with just a few crumbs, your cake is done. If there’s wet batter on it, give it a few more minutes.

Overbaking can dry out your cake, especially with almond flour, so keep a close eye on it towards the end of the baking time.

3. Cool Completely Before Frosting

Let the cakes cool in their pans for about 10 minutes, then turn them out onto a wire rack to cool completely. If you try to frost a warm cake, the frosting will melt and slide right off.

FAQ

1. Why did my cake turn out dry?

If your cake is dry, it could be because of a few reasons: overmixing the batter, overbaking, or measuring the flours incorrectly. Make sure to mix just until ingredients are combined, check the cake a few minutes before the baking time is up.

2. Can I add flavors to the cake?

Absolutely! This vanilla cake is a great base for many flavors. You can add extracts like almond, lemon, or coconut for different tastes. You can also add unsweetened cocoa powder or even fold in some keto-friendly chocolate chips, chopped nuts, or berries into the batter.

3. Can I use a hand mixer instead of a stand mixer?

Yes, you can use a hand mixer if you don’t have a stand mixer. You’ll just need to mix for a bit longer, especially when creaming the butter and sweetener. It might take about 7-10 minutes with a hand mixer to get the right fluffy texture.
