      Step 1

      Preheat the oven to 450°F (230°C).

      Step 2

      Tie and secure the roast with heavy string at about 1-inch intervals. Then, rub the surface of the roast with rosemary, garlic, and seasonings (if using).

      Step 3

      Place the roast on the rack of a broiler pan (you can also use a roasting pan). Bake for 1 hour 15 minutes. You can insert a meat thermometer – the temperature should reach 155°F.

      Step 4

      Remove the meat from the oven and sprinkle it with salt. Cover with aluminum foil and let it stand for 15 minutes. Then, remove the string and slice. Enjoy!

      1. The Lamb

      Take your lamb out of the fridge at least 1 hour before cooking. When meat is at room temperature, it cooks more evenly from the center to the outside.

      If you put cold meat straight from the fridge into a hot oven, the outside might get too done while the inside stays undercooked. This tip makes a huge difference in how evenly your roast cooks.

      2. Getting That Crust

      Let the surface of the meat dry completely before it goes in the oven. Use paper towels to pat the meat dry before adding seasonings.
