      Make sure the meat is partially frozen; otherwise, you won’t be able to slice it thin enough.

      Use a very sharp knife to slice the beef thinly – aim for 1-2 mm thickness.

      Mix the baking soda and seasonings with 1/2 cup of water in a large bowl. Place the beef slices inside, mix, and let them sit in the fridge for an hour.

      Place a deep pan over medium-high heat and pour about 1″ of oil (I prefer to use beef tallow). Carefully place a few slices of beef in the oil.

      Flip them over (use tongs) a few times until browned – it should take about a minute. Then, place them on paper towels, and repeat with the remaining slices.
