  • Salt
  • Pepper
  • Your Favorite Seasonings

👨‍🍳 How To Make

Follow these steps:

Step 1

Start by preheating the oven to 450°F (230°C). Then, wrap a slice of bacon around each fillet and secure it with a toothpick.

Step 2

Season all sides of the fillets with salt, black pepper, and other seasonings that you like.

Step 3

Add tallow to an oven-proof skillet over medium-high heat. Let it heat until very hot.

Step 4

Then, add 1 tablespoon of butter and let it melt. Brush the top of both fillets with butter.

Step 5

Add fillets to the hot oil – butter side down. Brush the top side with butter and sear on all sides.

Step 6

Place skillet in the oven (uncovered) for 5-6 minutes. 7-8 minutes for medium well. Then, remove from the oven and transfer the steaks to a cutting board. Allow to rest for 7-8 minutes and serve.

💡Tips

1. Bringing the Steaks to Room Temperature

Before cooking your filet mignons, it’s IMPORTANT to let them sit at room temperature for about 30 minutes. This step allows the meat to cook more evenly, as a cold steak straight from the refrigerator will have a cooler center that takes longer to cook through.

Bringing the steaks to room temperature will help you achieve a perfectly cooked filet mignon with a beautifully seared exterior and a tender, juicy interior.

2. Letting the Steaks Rest

After cooking your filet mignons, it’s IMPORTANT to let them rest before slicing and serving. During the resting period, the juices within the meat redistribute, resulting in a more tender and flavorful steak.

Loosely cover the steaks with foil and let them rest for 7-8 minutes before cutting into them. This will ensure that your filet mignons are juicy and delicious.
