- 8 1/2 tablespoons butter (softened)
- 1 clove Garlic
- Optional: black pepper

Add the garlic and anchovies to a pan over medium heat.
Step 2
Saute until the anchovies start to dissolve and the garlic is browned (about 3 minutes).

Remove the garlic clove.

1. Softening the Butter
To achieve a smooth and easily spreadable anchovy butter, it’s important to start with softened butter. Remove the butter from the refrigerator about 30 minutes to an hour before you plan to make the recipe. This will give the butter enough time to soften at room temperature, making it easier to mix with the sautéed anchovies.
2. Removing the Garlic Clove
After sauteing the anchovies and garlic, it’s important to remove the garlic clove before mixing the anchovies with the softened butter. The garlic clove is left whole during the sautéing process to infuse the anchovy mixture with garlic flavor without overwhelming the delicate taste of the anchovies.
Leaving the garlic clove in the mixture when blending with the butter can result in an overpowering garlic flavor and a less smooth texture.
