To make these keto broccoli cheddar muffins you will need:

4 Eggs

1.5 cups Grated Cheddar Cheese – Cheddar cheese is the best choice for this recipe. If you can find mature cheddar, I recommend using it instead. You can also use Gouda or Monterey Jack, but they have a milder flavor. 

1.5 cup Almond Flour – Almond flour is a great alternative to wheat flour. It is more nutritious and has many benefits. It is a great option for those on a keto diet.

There are so many recipes that can be made with almond flour. It is a versatile flour that can be used in many different ways.

3.5oz (100g) Broccoli 

1/4 cup (60g) Plain Yoghurt – These cheddar broccoli muffins are light and fluffy, thanks to the yogurt. Make sure to use plain, high-quality yogurt without any added sugars.

Full-fat greek yogurt work best in this recipe. Make sure to drain the liquid from the yogurt before adding it.

2 teaspoon Baking Powder

1/2 teaspoon Onion Powder

1/2 teaspoon Garlic Powder

How To Make Keto Broccoli Cheddar Muffins?

These broccoli and cheddar muffins are so easy to make! Here are 3 easy to follow steps:

Step 1: Preparing The Eggs

Start by beating the eggs until they are fluffy. This should take about two minutes.

Try to get as much air into them as possible – that’s the “secret” of these keto broccoli cheddar muffins and why they are so light and airy!

Step 2: Mixing Other Ingredients

Add the dry ingredients, yogurt, and cheese to an electric mixer. Mix until well combined, breaking up the grated cheese.

You can also mix by hand if you don’t have an electric mixer but it might take a little longer.

When done, stir in the chopped broccoli.

Step 3: Baking

Fill the batter into a muffin tin. Use paper cups for the best results. Sprinkle grated cheese, and bake for about 25 minutes.

When you see the tops are golden brown, they’re done. To easily remove the paper, wait until the muffins have cooled completely.

Adding Different Veggies

I found that broccoli is the best veggie to use in these muffins. It really adds a lot of flavor and moistness to the muffins.

If you don’t want to use broccoli, you could try using cauliflower. Adding roasted zucchinis are also a great way to sneak in some extra flavors.

Adding Meat (Yummy!)

You can really “upgrade” these cheesy broccoli muffins by adding some meat to the mix. Chopped ham will work great, or you could even use fried bacon lardons.

The amount is up to you, but I found that you can add quite some meat without making the muffins lose their density.

Can You Freeze The Muffins?

Yes. It’s best to vacuum seal them and then place them in the freezer. They will last 4-6 months, depending on the quality of the seal. The texture will change a bit, but they will still be delicious!

In my opinion, since these are so easy to make, it’s best to just make a fresh batch when you want them.

When they are fresh, they have the best texture and flavor. Freezing kinda changes the consistency a bit, so they’re not quite as good as when they’re fresh.

Is Broccoli Keto Friendly?

Yes. Broccoli is one of the best vegetables to eat on a keto diet. It is low in carbs (about 6g per serving of 90g). Some people don’t like its taste, but it can be easily disguised in other dishes.

I like how broccoli tastes, and use it in many of my keto recipes. I also like to eat it as a snack – baked in the oven with some cheese on top.

People who experience diarrhea on the keto diet, might find that broccoli improves their condition. This is because broccoli acts as “bile binder”.
