Ingredients
  • 2 pounds Beef ribs / short ribs
  • 2 tbsp Soda
  • 4 tbsp Smoked paprika
  • 1 tbsp Chili pepper seasoning
Instructions
  • Cut beef ribs into small cubes. The smaller the better.

  • Place the meat in a bowl. Add the baking soda, smoked paprika and chilli pepper. Mix everything well. Let it marninate for at least 1 hour.

  • Place the meat on a baking tray (using aluminum foil and baking paper).

  • Preheat the oven to 180C (355F). Cook for 25-30 minutes until the meat is browned. Mix the meat after the first 15 minutes.

Histamine intolerance is a disorder associated with an impaired ability to efficiently metabolize ingested histamine.  The longer you cook meat (especially if the meat is not submerged in water while being cooked) – the higher its histamine content will be.

Baking Soda Tenderizes Meat Quickly

So how do you make a very “tough” cut of meat – like short ribs – tender? Easily. The secret is using baking soda (Sodium bicarbonate). You add 1.5 teaspoons of it per pound of meat. Let it do its job for at least 1 hour (the longer the better…). It tenderizes the meat and makes it super soft. That way, after just 30 minutes of cooking in the oven – these keto short ribs are very tender. Sodium bicarbonate is available at any supermarket. It’s cheap and works amazingly well for most cuts of meat. Some people even add it to steaks, to make them even more tender. It’s important not to add too much Sodium bicarbonate because it has a taste that many will not like when added too much.

Use a Good Knife

In order to cut meat into small cubes, as you need to for my recipe – I highly recommend using a good chef/meat knife and making sure it is sharp. Cutting meat with a blunt knife does not only take a lot of time – but it’s also dangerous. A sharp knife cuts the way you want it, but when it’s not sharp enough – it can slip and cut you. There are plenty of Chinese companies nowadays that offer excellent kitchen knives for very low prices. Some of these companies use high-quality steel like VG10. Of course that if you can afford it – buy a high-quality Japanese knife. Most of them are amazing! With a good knife – cutting the ribs for this beef ribs oven recipe is super easy and fairly quick. It takes me about 20 minutes to cut 3 pounds of meat into very small cubes. 

Best Short Rib Recipe

In my opinion – this is the best short rib recipe. It’s quick, and the meat is super tender. It also tastes much better than slow-cooked keto short ribs. Add smoked paprika to it – and it becomes an absolutely delicious dish! I personally like it as much as expensive steaks and cuts like ribeye and sirloin. Beef ribs have a much deeper and more complex meaty taste, compared to other more tender cuts.
